So, my cousin asked me for this, my mother’s recipe. Funny how certain dishes become embedded in the family DNA.
First up, you have to make a thick cheese sauce, and let it cool. Then, using a firm fleshed fish, layer fillets in the bottom of a baking dish. Cover the fish with sliced mushrooms, and spread the now cold cheese sauce over. Cover with foil and put in a moderate oven for 20 minutes.
Then, remove from the oven and with the point of a knife gently stir the sauce to absorb the juices from the fish & the mushrooms. Sprinkle a cheesy crumble over the sauce and return to the oven for a further spell, maybe 20 minutes, uncovered, until the top is brown.
Anyway, people love it.
